Four Fall Recipes That Will Get You into the Spirit

It’s harvest time, and that means indulging in savory, comforting meals that feel like fall. From warm, nourishing soups and stews to baked pot roasts and casseroles, we’ve created a shortlist of our favorite fall recipes. Perfect to indulge in this time of year.

Here Are Four Fall Recipes That Will Help You Get into the Spirit:

Fall Oatmeal

Pour 1 cup of steel cut oats into a pot and cover with 2 cups of water. Add a pinch of salt and splash of vanilla extract, then add raisins and cranberries and let boil for 30 minutes. Meanwhile, in another pot, boil a sweet potato for 30 minutes or until soft. Once the oats have absorbed most of the water, and the sweet potato is done, mash the sweet potato into the oatmeal and stir for a creamy consistency. Top with cinnamon, nuts, and milk for a taste of fall. Ingredients can be purchased at Trader Joe’s or Food4Less in the Cascade Village Shopping Center.

Butternut Squash Soup

Peel and seed a butternut squash then dice into 1-inch chunks. Peel carrots and dice them into 1-inch chunks. Place the butternut squash and carrots into a pot and cover with vegetable broth. Boil for 30 minutes or until vegetables are soft. Let the soup cool for 30 minutes, then puree in batches using a blender or immersion blender. Add water as necessary to achieve your desired consistency. Top with brown sugar, nuts, and diced apples for a warm, nourishing fall meal. Turkey Meatballs with Mashed Potatoes

For a heartier dinner, buy half a pound of ground turkey thighs, and half a pound of ground turkey breasts (available at Food4Less). Add both to a bowl with Italian seasonings, garlic and onion flakes, Worcestershire sauce, and a starch of your choice (we like using shredded hash browns, but breadcrumbs work too!). Roll meat mixture into 2 inch meatballs and place in a stovetop pan with some olive oil. Cook over medium high, turning as needed until the entire meatball is cooked through and slightly brown on the outside.

On a separate burner, fill another pot with potatoes cut into 1-inch chunks then cover with water. Boil for 30 minutes or until potatoes are soft. Drain most of the water then use a potato masher (available at Bed Bath & Beyond in the Cascade Village Shopping Center) to mash potatoes. Add olive oil, salt, and pepper until the desired consistency is reached.

Meanwhile, follow the instructions on six packets of turkey gravy (available at Food4Less). Place mashed potatoes on the center of the plate with meatballs on top, then pour gravy over everything for a hearty fall meal that suits the season.

Rice Pudding

For dessert, try rice pudding! Add two cups of rice, two cups of milk, 1 cup of raisins, ⅓ cup of sugar, and a splash of vanilla to a pot. Simmer on low for 30 minutes or until milk is almost entirely absorbed, then stir an egg into the mixture. Add to a cassoulet dish (available at Bed Bath & Beyond in the Cascade Village Shopping Center), and serve with cinnamon and warm milk.
